Ingredient preparation
Clean the button and oyster mushrooms with a damp paper towel and slice them into medium-sized pieces. Finely chop the shallots and mince the garlic cloves. Finely chop the fresh parsley leaves and slice the baguette diagonally for serving.
Sautéing the mushrooms and soup base
In a large pot or deep cast-iron Dutch oven, heat the butter together with the olive oil over medium heat. Add the chopped shallots and sauté for 2-3 minutes until translucent and sweet. Add the garlic and cook for another 30 seconds until fragrant.
Increase the heat and add the sliced mushrooms along with the thyme sprigs. Brown the mushrooms for 7-9 minutes, stirring occasionally, until the liquid released has completely evaporated and the mushrooms develop a golden, flavourful crust.
Chef's tip
Tempering the cream and Dijon mustard mixture with a little hot soup before adding it prevents curdling and ensures a velvety, perfectly smooth texture.
If you prefer a thicker soup, you can blend about a third of the soup directly in the pot using an immersion blender before adding the cream, keeping the rest of the mushrooms whole for a pleasant texture.
For exceptional French-style croutons, rub the toasted baguette slices with half a clove of raw garlic just before serving.
