Preparing the vegetables
Peel the potatoes and cut them into medium cubes of about 2-3 cm, then place them in a bowl of cold water to keep their texture firm. Peel the carrots, parsnip root, celeriac, and onion, then finely dice them into even cubes. Cut the red bell pepper into small cubes.
Heat the sunflower oil in a large pot over medium heat. Add the onion, carrots, parsnip, celeriac, and bell pepper, sprinkle with half a teaspoon of salt, and sauté for 5-6 minutes, stirring occasionally, until the vegetables soften slightly and release their sweet aromas.
Cooking the soup
Drain the potatoes and add them to the pot over the sautéed vegetables. Pour in 2 liters of hot water and add the bay leaves. Partially cover with a lid and simmer the soup over medium-low heat for about 15-20 minutes, until the potatoes are tender and can be easily pierced with a fork.
Chef's tip
For an authentic, old-fashioned flavor, use fresh bran borș and always boil it separately before pouring it into the soup to prevent the potatoes from turning hard.
Fresh lovage added right after turning off the heat retains its essential oils intact and gives the soup the unmistakable scent of traditional Romanian cuisine.
