O capodoperă a gastronomiei franceze clasice, Potage Soubise este o supă cremă de o eleganță desăvârșită. Ceapa dulce este înăbușită lent în unt fără a se rumeni, apoi fiartă împreună cu orez alb și supă clară de legume, transformându-se într-o textură mătăsoasă, îmbogățită cu smântână dulce, un praf de nucșoară și arpagic proaspăt.

Preparing and sweating the onions
Peel the onions and slice them thinly. In a large, heavy-bottomed pot, melt the butter over low heat. Add the sliced onions and a pinch of salt.
Sweat the onions covered, over very low heat, for 15–20 minutes, stirring occasionally. It is essential that the onions turn translucent and very soft without browning at all, in order to preserve the bright, pale color of the soup.
Simmering and blending the soup
Rinse the round-grain rice and add it to the pot over the sweated onions. Pour in the warm vegetable stock and bring everything to a boil.

Authentic secret: In classic French cuisine, Soubise relies on the natural starch from the rice to give the soup a velvety consistency, without flour or potatoes.
