O ciorbă tradițională românească de vară, plină de prospețime, pregătită din roșii coapte și suculente de grădină, legume dulci și tăiței fini de casă cu ou. Preparation method
Preparing the vegetables
Peel the onion, carrots, celery root, and bell pepper. Finely chop the onion, cut the carrots and celery root into small cubes or thin rounds, and the bell pepper into short strips.
Blanch the fresh tomatoes in boiling water for one minute, peel them, and coarsely mash them or chop them into medium cubes, keeping all the flavorful juice.
Cooking the soup
In a large pot of about 4 liters, heat the sunflower oil over medium heat. Add the onion, carrots, celery root, and bell pepper, sautéing them for 5 minutes until they soften slightly and release their sweet flavors.
Chef's tip
For an even more intense summer flavor, use fleshy, sun-ripened tomatoes, such as the Oxheart variety or Romanian garden tomatoes.
Borș is always boiled separately before being added to the soup, so as not to interrupt the cooking process of the vegetables.
