Preparation method
Finely chop the yellow onion and slice the garlic into thicker pieces.
Cut the meat slices in half and season them generously with salt and pepper on both sides. In a large pot, heat 80 ml of oil over medium-high heat and sear the meat in batches until golden brown on both sides. Remove the meat to a plate.
In the same pot, add the yellow onion, reduce the heat to medium-low, and sauté for about 15 minutes, stirring occasionally, until browned. Add the garlic, peppercorns, allspice, thyme, and rosemary. Sauté everything for another 1 minute, stirring continuously.
