Wash the currants thoroughly and remove the stems. Pass the fruit through a juicer or crush them and strain through a fine sieve to obtain approximately 1 kg of pure juice.

Pour the juice into a large pot, add the sugar, and mix well. Bring the mixture to a boil.

Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally to prevent sticking.
Chef's tip
Properly stored jam in sealed jars lasts at least one year. After opening, keep the jar in the refrigerator.
