
Orange Ice Cream with Fermented Cream

Preparation method
Wash the whole oranges thoroughly and pour boiling water over them 3 times successively. This process removes impurities from the peel and helps release intense aromatic oils.
Finely grate the zest and squeeze the juice from both oranges. Place the juice, grated zest, and granulated sugar (or golden syrup) in a small saucepan. Bring to a boil and let it reduce slightly over low heat, stirring continuously, until a lightly reduced syrup forms. Remove from heat.
Into the warm syrup, incorporate the rest of the ingredients (fermented cream, powdered sugar, and vanilla sugar). Mix well until smooth, transfer the mixture to a lidded container, and leave it in the refrigerator overnight to cool completely and allow the flavors to meld.
Chef's tip
For an even finer texture, you can pass the mixture through a fine sieve before chilling it, to remove any pieces of orange peel.
