Preparation method
Preheat the oven to 180 °C and prepare a non-stick doughnut pan. If necessary, grease it with a little butter.
In a medium-sized bowl, mix the melted butter with 1 teaspoon of lemon juice and 150 ml of milk. To the liquid mixture, add the spelt flour, half of the brown sugar (50g), baking powder, baking soda, half of the cinnamon (1 teaspoon), and a pinch of salt. Mix everything until you get a smooth dough.
Pour the dough into the prepared pan and bake for 10–12 minutes at 175–180 °C, until the doughnuts turn golden. Meanwhile, mix the remaining sugar (50g) with the remaining cinnamon (1 teaspoon) in a deep plate for decoration.
