Preparation method
Preparing the roasted cherries
Wash the cherries, cut them in half, and remove the pits. Mix them with granulated sugar and cornstarch in an oven-safe dish. Bake them in a preheated oven at 200°C for 40 minutes. Let the roasted cherries cool completely in the refrigerator, preferably until the next day.
Preparing the ice cream base
In a large bowl, thoroughly mix the mascarpone cheese with the whipping cream, powdered sugar, salt, and vanilla bean seeds until smooth. Let the mixture chill in the refrigerator until the next day.
The next day, pour the mixture into the ice cream maker and follow the appliance's instructions. When the ice cream is almost ready, add the cold roasted cherries and mix very briefly. Transfer the ice cream to a lidded container and place it in the freezer. Before serving, let it soften for about 15 minutes at room temperature.
