Preparation method

Preparing the crepes

1

In a bowl, beat 1 egg with a pinch of salt (1 g). Incorporate the sifted type 000 white wheat flour, then gradually pour in the 3.5% whole milk, whisking vigorously with a whisk until you obtain a smooth and lump-free batter.

2

Grease a non-stick pan with a little melted butter (10 g) and cook the thin crepe sheets one by one, browning them nicely on both sides (approx. 1-2 minutes per side). Place them on a plate.

Aromatic apple filling

1

Wash, peel, and coarsely grate the apples. In a saucepan, melt 25 g of 82% fat unsalted butter and sauté the grated apples together with 50 g of granulated white sugar, the ground cinnamon, and 1 sachet of vanilla sugar for 8-10 minutes, until all the liquid released by the fruit has reduced.

Chef's tip

For an even deeper flavor, you can lightly toast the walnut kernels in a dry pan before mixing them with the sautéed apples.

The meringue whips up flawlessly if the egg whites are at room temperature and the bowl is clean and grease-free.
