Preparing the fruit and the pan

Preheat the oven to 180 °C. Prepare a 23 cm diameter cake pan.

Slice 5 tangerines thinly and set them aside. Grate the zest and squeeze the juice from the remaining 3 tangerines.

In a medium saucepan, bring water to a boil. Add the tangerine slices and boil them for 3 minutes to remove bitterness. Drain them and place them on a paper towel to dry.
