Place the egg whites and sugar in a glass or metal bowl. Place the bowl over a saucepan with simmering water over low heat (bain-marie) and heat the mixture, stirring continuously until the sugar is completely dissolved and the mixture is warm to the touch.

Remove the bowl from the double boiler and whisk the egg whites at high speed for about 10 minutes, until you get a very firm, dense, and glossy foam.

While whisking the egg whites, melt the chocolate in a bain-marie or microwave and let it cool slightly (it should be fluid, but not hot).
