PREPARING THE SHORTCRUST DOUGH
Sift 200g of flour together with 50g of cornstarch and 50g of powdered sugar, then incorporate the salt. Add 150g of cold butter cut into cubes, the egg yolk, and 2 tablespoons of ice-cold water. Knead quickly until you obtain a homogeneous dough. Form a ball, wrap it in cling film, and leave it in the refrigerator for one hour.
Roll out the chilled dough on baking paper into a rectangle, adapted to the size of the baking pan (approx. 25 x 35 cm). Prick the dough with a fork and place it back in the refrigerator for 30 minutes.
PREPARING THE FILLING
While the dough is chilling, prepare the filling. Peel the apples, cut them into quarters, and remove the cores. Slice them thinly and mix them with brown sugar and fresh thyme leaves.
