Preparing the dough
Preheat the oven to 185 °C. Prepare a small loaf pan (approx. 18 cm × 7 cm) and line it with baking paper. Prepare a large mixing bowl.
Peel the bananas, place them in the bowl, and mash them with a fork until you get a paste. Add the eggs, butter (at room temperature), and liquid honey. Mix well.
Add the whole spelt flour, fine oat flakes, baking soda, cinnamon, and a pinch of salt. Mix the composition until smooth. Finally, chop the dark chocolate into small pieces and incorporate it into the dough.
Chef's tip
For an even more intense flavor, use very ripe bananas with spotted peels. They are sweeter and provide a moister texture to the loaf.
