Preparing the dough
In a large bowl, beat the softened butter with the powdered sugar until light and fluffy. Gradually add the egg yolks, lemon zest and juice, finely chopped lemon balm, and the remaining ingredients (flour, polenta, and salt). Knead until you get a smooth and dense dough.
Divide the dough into two equal parts. Shape each part into a log about 5 cm in diameter. Wrap the logs in plastic wrap and chill in the refrigerator for at least an hour (or even overnight) to firm up.
Baking
Preheat the oven to 180°C. Remove the dough from the refrigerator and slice it into rounds about 5 mm thick. Place the slices on a baking sheet lined with parchment paper, leaving enough space between them as they will expand during baking.
