Preparing the apples and flavorings

Wash, peel, and core the apples, then grate half of them on a coarse grater and finely dice the rest. Sprinkle the ground cinnamon and a tablespoon of the granulated white sugar over them, then let sit for 5 minutes to develop their flavors.

Preheat the oven to 180°C (medium heat) and line a rectangular baking pan (about 20x30 cm) with baking paper or grease it with a little melted butter.

Preparing the cornmeal batter

In a spacious bowl, beat the chicken eggs together with the remaining granulated white sugar, vanilla sugar, and a pinch of fine table salt until frothy and doubled in volume.

Chef's tip

For an even deeper traditional Transylvanian flavor, you can lightly toast the walnut kernels in a dry pan before sprinkling them over the cake.

The sweet cornmeal cake is even tastier the next day, once the flavors of the apples and cinnamon have fully melded into the fine cornmeal texture.
