Ingredients overview
- 800 g of apples
- 100 g of white granulated sugar
- 75 g of lemon (juice, zest, and slices)
- 5 pcs of whole cloves
- 17 g of cinnamon stick
- 4 g of star anise

Peel the apples, cut them into eighths, and remove the core. Place them in a saucepan, sprinkle with lemon juice, and pour 700 ml of water over them.

Add the sugar, cinnamon sticks, star anise, cloves, lemon zest, and a lemon slice.

Simmer over low heat for about 20 minutes, until the apples are soft but not mushy. The compote is best served warm.
Chef's tip
Use only the yellow part of the lemon peel; the white part is bitter.
The apples should be soft but retain their shape, not overcooked.
Lemon juice prevents the apples from oxidizing, preserving their beautiful color.
