Preparation method

PREPARING THE BASE

Sift the powdered sugar together with the instant coffee to remove any lumps.

On a baking sheet, draw a circle with a diameter of 22 cm and place it drawing-side down on a baking tray. Preheat the oven to 180°C.

Add a pinch of salt to the egg whites and beat them until you get a dense foam. While beating at maximum speed, gradually add, spoon by spoon, the powdered sugar and coffee mixture (make sure each portion is well incorporated before adding the next). Finally, incorporate the starch and vinegar.

Chef's tip

For a contrast of taste and color, pomegranate seeds are an excellent accompaniment for this light cake.
