Preparation method
Place the dates in a bowl, cover them with water, and let them soak overnight (or at least 2 hours) to hydrate. Drain the water, cut the dates into smaller pieces, and place them in a blender. Blend until you get a smooth paste.
Add the cashew nuts and cocoa powder to the date paste. Blend again briefly, so that the nuts are chopped but retain a slightly crunchy texture.
Line a rectangular pan (e.g., a loaf pan) with baking paper. Transfer the mixture into the pan and press it down firmly with your hand or a spoon, leveling it evenly to remove air pockets.
Chef's tip
You can add a pinch of sea salt to enhance the chocolate flavor or a little vanilla extract for a more delicate taste.
