Preparing the cream

Separate the eggs. Mix the egg yolks with the granulated sugar until the mixture becomes whitish and creamy, then carefully incorporate the mascarpone cheese, using a whisk or a spatula, until smooth.

Beat the egg whites until stiff (meringue) and gently fold them into the mascarpone mixture, using upward strokes to maintain the cream's aeration.
Assembling the dessert

Mix the cooled espresso coffee with the amaretto liqueur in a bowl. Quickly dip the ladyfingers into this mixture (do not leave them too long to avoid excessive softening).
Chef's tip
For a more intense flavor, use high-quality, freshly brewed espresso coffee.
If you want a dessert safer for children, you can replace the amaretto liqueur with a few drops of almond essence.
