Preparation method
Preheat the oven to 175–180 °C and line a baking tray with baking paper.
Prepare a large bowl. Peel the banana, place it in the bowl, and mash it with a fork until it becomes a paste. Cut the chocolate into small pieces and add it to the bowl. Then add the oat flakes, egg, honey, cinnamon, baking soda, vanilla extract, cornstarch, and a pinch of salt. Mix everything very well until smooth.
Using a spoon, form circles with a diameter of approximately 5 cm from the mixture, directly onto the prepared tray. The dough should be enough for 12 cookies. After forming all the cookies, place the tray in the oven and bake for 20–22 minutes at 175–180 °C.
Chef's tip
For a more intense flavor, you can use chocolate with over 90% cocoa content. If the bananas are very ripe, the cookies will be even sweeter and more flavorful.
