Preparing the Rice

Rinse the rice thoroughly (about 5 times) until the water runs clear, then soak it in water overnight (or at least 4 hours). Drain the water through a fine sieve. Handle the rice carefully, as the soaked grains are fragile.

Place the rice in a clean cloth (cheesecloth) and wrap it. Steam it, covered, for about 30 minutes, until it becomes translucent and soft.
Preparing the Syrup and Sauce

While the rice is cooking, prepare the syrup: mix half of the coconut milk (80 ml) with 50 g sugar and 2 g salt. Heat gently until the sugar dissolves. It is important that the syrup is ready before the rice is finished.
