
Sweet Potato and Dark Chocolate Brownies

Preparation method
Start by preparing the sweet potatoes: peel them and cut them into small cubes (approximately 2 cm). Place the cubes in a pot, cover them with water, and bring to a boil. Once the water boils, reduce the heat to medium and cook the sweet potatoes for 15-17 minutes, until they become very soft.
While the sweet potatoes are cooking, chop the dark chocolate into larger pieces.
When the sweet potatoes are ready, drain them well and mash them with a fork until you get a fine puree. Preheat the oven to 180 °C and prepare a baking dish (approximately 15 cm x 20 cm) lined with baking paper.
Chef's tip
For an even finer texture, you can pass the sweet potato puree through a fine sieve before mixing it with the rest of the ingredients.
The brownies keep excellently in the refrigerator in an airtight container, becoming even denser and tastier the next day.
