Preparing croutons and bacon
Preheat the oven to 140 °C.
Cut off the crusts from the toast slices and cut the bread into cubes of approximately 1 cm. Place them on a baking tray and bake in the preheated oven for 15 minutes, until golden and crispy. Let them cool.
Cut the bacon into 1 cm cubes and fry it in a dry pan over medium heat until crispy and golden. Remove the bacon and set it aside. In the remaining fat in the pan, add the bread croutons and olive oil, then sauté for another 2 minutes for extra flavor.
Chef's tip
Grate only the yellow part of the lemon peel; the white part is bitter.
For an even more flavorful dressing, you can leave the sauce in the refrigerator for 30 minutes before serving.
