O salată principală caldă și vibrantă din bucătăria libaneză, plină de proteine vegetale și arome orientale intense. Fasolea albă cremoasă este trasă la tigaie în ulei de măsline aromatizat cu usturoi, fulgi picanți de chili, chimion și boia dulce, apoi stinsă cu suc proaspăt de lămâie. Servită călduță peste un pat crocant de rucola și mix de salată, cu roșii cherry dulci, ceapă roșie și verdețuri proaspete, totul este desăvârșit cu miez crocant de nucă rumenit.

Preparing the vegetables and herbs

Drain the canned white beans thoroughly in a colander and rinse briefly under cold running water, then let drain completely. Peel the garlic cloves and finely mince them. Cut the red onion into thin julienne strips, and halve the plum cherry tomatoes.

Thoroughly wash the fresh herbs. Finely chop the bunch of parsley and bunch of coriander, discarding any woody stems. Lightly toast the walnut kernels in a dry pan for 2-3 minutes until fragrant and crisp, then chop coarsely.

Spicy sautéing of the beans (Fasolia Harra)

Heat the 3 tablespoons of extra virgin olive oil in a spacious pan over medium heat. Add the minced garlic, the teaspoon of chili flakes, ground cumin, and sweet paprika powder. Sauté everything for 30-40 seconds, stirring constantly, until the spices release their aromas and the oil takes on a rich reddish color.

Chef's tip

If you prefer a milder heat, you can halve the amount of chili flakes or use Aleppo pepper flakes.

The warm beans will quickly absorb the lemon and garlic flavors, so it is recommended to spoon them over the salad leaves just before serving to maintain the freshness and crisp texture of the greens.
