Preparation method

Ingredients overview

  • 2 slices of artisanal bread
  • 400 g of tomatoes
  • 10 g of red onion
  • 30 g of Parmesan block
  • 60 ml of extra virgin olive oil
  • 1 teaspoon of red wine vinegar
  • 1 clove of garlic
  • 5 fresh basil leaves
  • 1 pinch of ground black pepper
  • 1 pinch of table salt

Finely chop the red onion. Tear the basil leaves into smaller pieces.

Remove the hard core of the tomatoes and cut the pulp into cubes of approximately 0.5 cm. Place them in a bowl, add the onion, salt, pepper, basil, vinegar, and olive oil. Mix all ingredients well.

Toast the bread slices in a pan over medium heat, on both sides until golden and crispy. While the bread is still warm, rub each slice with the peeled garlic clove. Place the tomato mixture on top and finish with Parmesan shavings.
