Mix the arugula and lamb's lettuce in a large bowl. Break the bun into small pieces. Finely chop the anchovy fillets. Peel the garlic, cut it lengthwise, and remove the central germ.
Bring water to a boil in a small saucepan. Prepare a piece of cling film about 30 cm long and carefully line a small bowl, letting the edges of the film hang outside.
Pour a teaspoon of oil into the cling film-lined bowl, carefully crack an egg inside (be careful not to break the yolk), and gather the edges of the film so that no air remains inside. Tie the film tightly. Repeat the procedure for the other 3 eggs.
Chef's tip
You can replace the white bun with whole wheat bread for a fiber-richer option.
If you prefer a more intense flavor, you can add a little grated Parmesan cheese on top of the salad before serving.
