Ingredients

  • 2 cups of cooked brown rice
  • 1/2 piece of yellow onion
  • 1 clove of garlic
  • 1 piece of red bell pepper
  • 1/2 piece of Jalapeño pepper
  • 1/3 cup of fresh cilantro
  • 1 tablespoon of olive oil
  • 1/2 cup of canned black beans
  • 1 1/2 cups of water or bean broth
  • 1 pinch of salt
  • 1 pinch of ground black pepper

Instructions

    Sauté the aromatics: Heat the oil in a large pan over medium heat. Add the onion and cook until softened (3 minutes). Add the garlic and cook for another 20 seconds.

    Simmer the beans: Add the black beans and water. Increase heat to medium-high and bring to a gentle boil.

    Combine: Gently fold in the cooked rice. Cook for about 2 minutes until everything is warm and well combined.

    Finish: Add the cilantro, red bell pepper, and jalapeño just before serving. Season with salt and pepper to taste.
