Ingredients
- 400 g fennel
- 2 oranges
- 1 sweet apple (Golden Delicious)
- 4 handfuls of arugula
- 4 tablespoons extra virgin olive oil
- 2 tablespoons finely chopped fresh mint
- ½ teaspoon granulated sugar
- juice of 1 lemon
- 1 pinch table salt
- 1 pinch ground black pepper
Instructions
- 1Cut off the top of the fennel, cut the bulbs in half lengthwise, remove the hard core, and then slice them very thinly, about 1–2 mm. Place them in a bowl of ice water for 10 minutes to make them crispier. Then remove them and let them drain in a colander.
- 2Remove the core from the apple and cut the pulp into thin slices.
- 3Peel the oranges and cut them into individual segments (without the membrane). Squeeze the juice from the remaining pulp into a small bowl.
- 4In a large bowl, combine all the prepared ingredients. Add the arugula, olive oil, mint, sugar, and lemon juice. Season with a pinch of salt and freshly ground black pepper, then mix everything well.
