Preparing the onion and pumpkin

Slice the onion thinly and dust with flour. Heat vegetable oil in a small saucepan to 160 °C and fry the onion slowly until golden. Remove it to a plate lined with paper towels to absorb excess fat.

Preheat the oven to 200 °C.

Cut the pumpkin into slices approximately 1 cm thick and 8 cm long. Place them in a large bowl, season with salt, pepper, and 3 tablespoons of olive oil, and mix well. Arrange the slices in a single layer on a baking tray and bake for 10 minutes. Remove from the oven and let cool.
Chef's tip
For extra flavor, you can use 10% fat Greek yogurt, which is much creamier and perfectly balances the sweetness of the pumpkin.
