  • 250 g red bell pepper
  • 250 g red onion
  • 300 g zucchini

  • 75 ml extra virgin olive oil
  • 35 ml lemon juice
  • 28 g fresh garlic
  • 1 pc fresh aromatic herbs
  • 1 pinch table salt
  • 1 pinch ground black pepper

Wash and clean the vegetables. Cut them into equal-sized pieces to cook evenly. Thread them alternately onto the grilling skewers.

In a small bowl, mix the olive oil with lemon juice, crushed garlic, finely chopped aromatic herbs (thyme, oregano, basil, or parsley), salt, and freshly ground pepper.

Brush the skewers with the prepared marinade and grill them for about 15 minutes, turning them periodically and brushing them with the remaining marinade until the vegetables are tender and lightly browned.

Chef's tip

If using wooden skewers, soak them in cold water for 30 minutes before threading the vegetables, to prevent them from burning on the grill.
