Season the chicken meat with salt on both sides. Place it on the hot grill and cook until well done and browned. Let the meat rest on a cutting board for 3 minutes, then slice it into pieces approximately 0.5 cm thick.

Slice the tomatoes thinly. Slice the jalapeño peppers into fine rounds. Deseed the red bell pepper and cut it into thin strips of 0.5 cm. Place the bacon slices on the grill and fry until golden and crispy.

Assembling and Cooking the Quesadilla

On half of each tortilla, arrange tomato slices, chicken pieces, bell pepper strips, fresh cilantro, and a tablespoon of guacamole. Add jalapeño rounds to taste, crispy bacon slices, and a slice of cheddar cheese. Fold each tortilla in half.

Chef's tip

If you can't find ready-made guacamole, you can mash a ripe avocado with a little lemon juice, salt, and finely chopped red onion for a quick homemade version.
