
Breakfast Tostadas with Egg and Avocado

Preparation method
Preparing the Tortillas
Prepare a large pan (at least 20 cm in diameter) and heat it over medium heat. Place the tortillas in the dry pan and cook them for 30–60 seconds on each side until slightly crispy. Remove the tortillas from the pan and place them on plates.
Cooking the Eggs
Pour the rapeseed oil into the pan and prepare the fried eggs: carefully crack the eggs into the pan so that the yolk remains intact. Season with salt and pepper and cook over low to medium heat for 6–8 minutes. When the eggs are ready, remove the pan from the heat, but leave the eggs in it for now.
Preparing the Toppings
Prepare the remaining ingredients: peel and pit the avocado, then slice it thinly. Shred the iceberg lettuce. Dice the tomato into small cubes and place it in a bowl. Crumble the Telemea cheese over the tomatoes and season the mixture with salt and pepper.
