Peel the potato and grate it using a fine grater. Do the same with the cheddar cheese. Cut the chicken ham into small cubes, and the iceberg lettuce into thin strips.

Cooking the Filling

Prepare 2 plates and place one tortilla on each. In a spacious pan, heat 1 tablespoon of oil over medium heat. Add the grated potato and diced ham, then sauté for 4-5 minutes, until the potato is cooked. Divide the mixture evenly in the center of the two tortillas.

In a small bowl, beat the eggs with salt and pepper. Add another tablespoon of oil to the pan, reduce the heat to low, pour in the beaten eggs, and cook for 3-4 minutes, stirring continuously. Place the scrambled eggs over the potato and ham mixture. Sprinkle the iceberg lettuce and grated cheddar cheese on top.

Chef's tip

For extra flavor, you can serve the burrito with a little sour cream or salsa on the side.
