Preparation method

Ingredients overview

  • 4 pcs of wholemeal tortilla
  • 200 g of carrot
  • 1 tablespoon of olive oil
  • 1 teaspoon of smoked paprika
  • 1 pinch of ground cumin
  • 150 g of classic hummus
  • 2 handfuls of arugula
  • 8 pcs of radishes
  • 1 pinch of salt
  • 1 pinch of ground black pepper

Preparing the Carrots

Preheat the oven to 200 °C. Cut the carrots into larger sticks (like French fries). In a bowl, mix them with olive oil, smoked paprika, ground cumin, salt, and pepper. Place them on a baking tray with parchment paper and bake for about 20 minutes until soft and lightly browned.

Assembling the Wraps

Spread the hummus on each wholemeal tortilla. Add a layer of fresh arugula, the roasted carrot sticks, and thinly sliced radishes.

Roll the tortillas tightly and, if desired, wrap them in parchment paper to maintain their shape. Serve immediately or pack them for a healthy lunch.
