Check the oysters: they must be tightly closed. If an oyster is open, discard it immediately. Clean the shells thoroughly under cold running water.

Open the oysters using a special knife and a thick cloth for protection. Insert the tip of the knife into the oyster's hinge and twist gently until it opens. Cut the muscle that attaches the oyster to the upper shell and remove the lid.

Drain the first water from inside the oyster to remove any sand or shell debris. The oyster will quickly secrete a second, much cleaner and tastier water.

Chef's tip

If you don't have a special oyster knife, you can use a knife with a short, very sturdy blade, but be very careful not to injure yourself. Always use a folded cloth to hold the oyster firmly in your hand.
