The name Honey is the result of the production process. The coffee cherries are depulped, the skin is dried, and during the process, moisture is absorbed, making them as sweet as honey.
Production process
The journey of coffee beans to your cup. How is it produced?
The freshly harvested fruits are washed to remove any remaining debris from the harvest, before being sealed in airtight containers. They are then fermented in an anaerobic environment for 72 hours, before being rinsed with water and cleaned with a mechanical depulper.
The depulped coffee is then dried to a moisture content of 12-13% before being milled, sorted, and packaged for export.
Processing green coffee beans using this method has become popular since 2015, thus enriching the coffee with a strong, fruity body and an intensely fragrant aroma, complemented by a sweet, honey-like taste.
Although it comes from the same producer, Gayo Honey is processed differently, its flavor being more refined and nuanced than Gayo Natural, due to the anaerobic processing method.
