The redfish fillets come from responsibly managed wild catches and are already perfectly filleted. Skinless and practically boneless, they are ready to be enjoyed without any hassle. Redfish is found throughout the North Atlantic, preferring temperatures up to 8°C and depths of up to 1,000 meters. In Europe, two very similar species are caught: *Sebastes norvegicus*, also known as golden redfish, and *Sebastes mentella*, or deep-sea redfish. Both species live mainly near the seabed around Greenland, Iceland, and Norway, which is why they are usually caught with bottom trawls. Our deep-sea redfish, however, is caught exclusively with semi-pelagic trawls which have little to no contact with the seabed, protecting marine habitats and sensitive benthic ecosystems.
