Pacific wild salmon is one of the best-known and most popular food fish and can be used in many different ways - whether boiled, fried, grilled, or smoked.
For our wild salmon, we use two species: pink salmon (*Oncorhynchus gorbuscha*) and chum salmon (*Oncorhynchus keta*). They are caught in the Northwest and Northeast Pacific, where they live anadromously - hatching in freshwater rivers but spending most of their lives in the ocean. During this time, they travel long distances, which gives their flesh a firm texture with delicate marbling. When it's time to spawn, they return to their birthplace.
During spawning, male salmon develop a kype - an enlarged jaw - and a hump between the head and the dorsal fin. In pink salmon, the hump is so pronounced that it gives the species its name.
In chum salmon, the jaws change dramatically and become oversized, revealing impressive teeth. Their lateral scales also take on a greenish hue with purple stripes. Originally, chum salmon were found along the American Pacific coast, from Alaska to California, but they have now also spread to the waters around New Zealand, Iceland, and Norway.
