In translation, Little Gem means "little jewel" and is a variety of Romaine lettuce with crispy and tender leaves, airy, semi-long or "heart" shaped crispy.
Store the cleaned Little Gem leaves in a glass bowl or in a plastic box, first dab it with a damp paper towel and cover the lettuce leaves again with a damp towel. Do not close the box or cover it with foil, the salad must breathe. Keep refrigerated, but not for long.
