Preparation method
Preparing the vegetables
Wash all vegetables and herbs thoroughly. Cut the romaine lettuce into suitable pieces. Dice the cucumbers and radishes into small cubes. Finely chop the green onions, parsley, and mint. Place all chopped ingredients in a large bowl.
Browning the pita bread
Preheat the oven to 200 °C and line a baking tray with parchment paper. Cut the pita bread lengthwise to obtain two thin discs, then cut each disc into small cubes (approx. 1 cm x 1 cm). Spread the pita cubes on the tray and bake for 4-5 minutes at 190-200 °C. Remove the tray, stir the cubes, and bake for another 4-5 minutes until golden and crispy.
Finishing the salad
While the bread is baking, prepare the dressing: in a container with a lid, mix the olive oil, lemon juice, honey, and salt. Close the container and shake it well until the ingredients are combined. Pour the dressing over the vegetables in the bowl.
