ABOUT THE PRODUCT

This exotic coffee comes from the mountainous Kintamani region, Bali. The lot is produced by the Karana collective, a community of 377 small farmers guided by the Hindu philosophy "Tri Hita Karana", which promotes harmony between people, nature, and divinity. The farms are located on fertile volcanic soils (between the Batukaru and Agung volcanoes), at an average altitude of 1,200 m. A defining aspect of this terroir is biodiversity: the coffee grows in the shade of orange trees and other local crops, a practice that directly influences the aromatic profile. The cultivated varieties are S795 and the rare Kartika (a local mutation of the Catuai variety). The freshly picked cherries are hermetically sealed to ferment in their own juice before being sun-dried. This technique intensifies sweetness and creates an explosive fruity profile, specific to the new waves of Indonesian coffee.

Thanks to anaerobic fermentation and volcanic soil, Bali Karana offers an intense and "funky" sensory experience. In the cup, you will be greeted by a vibrant and complex acidity. The dominant notes are tropical, of mango and passion fruit, which intertwine perfectly with a distinct orange note (characteristic of the Kintamani region). The body is full, liqueur-like, and the aftertaste is long and sweet.

We recommend preparing this coffee using a filter method, which allows for a clear separation of tropical notes and highlights the fine citrus acidity.
