
Chicken breast in tomato sauce with mozzarella

- 240 g whole wheat pasta
- 400 g skinless chicken breast
- 150 g mozzarella
- 400 g canned chopped tomatoes
- 120 g white onion
- 20 g tomato paste
- 15 ml extra virgin olive oil
- 7 g garlic
- 1 teaspoon dried basil
- 2 tablespoons fresh green onion
- 1 pinch iodized table salt
- 1 pinch ground black pepper
Boil the pasta in salted water according to package instructions. Season the chicken breast with salt and pepper on both sides. In a pan, heat the olive oil and fry the chicken breast (whole) on both sides – approximately 3 minutes on one side and 4 minutes on the other. Remove the chicken from the pan and set it aside.
Leave the pan on the heat, reduce the flame and sauté the finely chopped onion together with the crushed garlic for 2 minutes in the juices left by the meat. Then increase the flame and add the tomato paste. Stir and add the chopped tomatoes, basil, and chopped green onion. Simmer everything over medium heat for 5 minutes. If the sauce reduces too much, add a little water.
Put the chicken breast back into the pan, cover it with the prepared tomato sauce, and place the mozzarella slices on top. Cover the pan with a lid and cook over medium heat for 3-4 minutes, until the cheese melts. Serve immediately with the cooked pasta.
