Peel and finely mince the fresh garlic and ginger. Slice the green onions into fine rings, separating the white parts from the green parts. Cut the nori seaweed sheets into thin strips using kitchen shears.

Heat the sunflower oil in a large skillet or wok over medium-high heat. Add the minced chicken and brown it for 5-6 minutes, breaking it up thoroughly with a spatula until it has completely changed color.

Add the minced garlic, grated ginger, 40 ml of soy sauce, 15 ml of sesame oil, and granulated white sugar to the pan. Sauté everything for another 2-3 minutes until the sauce is absorbed and the meat is browned, glossy, and intensely flavorful.

Chef's tip

For a spicy note characteristic of Nagoya's Taiwan Mazesoba style, you can add half a teaspoon of chili flakes or a few drops of flavored chili oil to the minced meat.

The secret to this dish lies in vigorously mixing the creamy egg yolk with the hot noodles and the base sauce right before eating.
