Preparation method
Ingredient preparation
Soak the rice noodles in lukewarm water for 8-10 minutes until slightly softened, but still keeping a firm texture. Drain them thoroughly and roughly cut them with kitchen shears into shorter pieces to make them easier to stir-fry in the wok.
Peel and devein the shrimp, removing the digestive tract if necessary. Cut the carrot into fine julienne strips, tear the oyster mushrooms into thin strips, finely chop the garlic cloves, and cut the green onions into segments of approximately 3 cm.
In a small bowl, prepare the sauce by mixing the soy sauce, fish sauce, sesame oil, and ground black pepper until completely combined.
Chef's tip
Do not over-soak the rice noodles in hot water; lukewarm water allows them to stay springy and prevents them from becoming sticky or mushy during stir-frying.
Sautéing the shrimp separately and returning them at the end is the secret to a tender and juicy texture, preventing them from overcooking.
