Preparation method
Preparing the meat and rolling
Place the chicken breast pieces on a cutting board and pound them gently to achieve an even thickness of about 1.5 cm. Roll each piece tightly into a compact cylinder and tie securely with kitchen twine to keep its shape during cooking.
Browning and braising in sauce
In a deep skillet or saucepan, heat the sesame oil over medium-high heat. Add the chicken rolls and brown them on all sides for 4-5 minutes, until they develop an appetizing golden color.
In a bowl, mix the soy sauce, rice vinegar, brown sugar, and 100 ml of warm water. Pour the mixture over the chicken, then add the thin slices of fresh ginger and the lightly crushed garlic cloves.
Chef's tip
For an even more intense flavor, you can let the cooked rolls marinate in the cooled sauce in the refrigerator overnight, then slice them cold and gently warm them up with the hot sauce before serving.
