Preparation method

Preheat the oven to 220 °C and prepare a baking tray lined with baking paper.

Peel the onion and cut it into thick slices. Wash the cherry tomatoes. Wash the bell pepper, remove the seeds, and cut it into pieces of approximately 2 cm. Crush the garlic and mix it with a tablespoon of oil and dried basil. Place all the vegetables together with the gnocchi on the tray, pour the oil mixture with garlic and basil over them, and bake for 15-20 minutes at 210-220 °C.

Remove the tray from the oven, tear the mozzarella into larger pieces and add it over the vegetables and gnocchi. Sprinkle the grated Parmesan on top and return to the oven for 1-2 minutes, until the cheese is nicely melted.

Chef's tip

For extra flavor, you can also add a few fresh basil leaves at the end.
