- 500 g of sea fish
- 300 g of shrimp
- 250 g of mussels
- 180 g of cherry tomatoes
- 1 clove of garlic
- 1 teaspoon of freshly chopped basil
- 1 teaspoon of freshly chopped parsley
- 60 g of tomato paste
- 3 tablespoons of extra virgin olive oil
- 1 pinch of iodized table salt
- 1 pinch of ground black pepper

Wash the fish, scale and fillet it, then cut it into smaller portions. In a large pan or pot, heat the olive oil with a whole garlic clove. Add the chopped parsley and basil, the fish pieces (including the head and bones for extra flavor), and the shrimp.

Pour water up to half the level of the meat and let it simmer for a few minutes. Remove the garlic clove, add the quartered cherry tomatoes, tomato paste, and mussels. Add more water so that the ingredients are almost covered and simmer for about 5 more minutes.

Serve the hot soup in deep plates, alongside toasted white bread slices.
