Vegetable Preparation
Start by preparing the vegetables. Peel the carrots and potatoes, then cut them into cubes of approximately 1 cm, along with the celery stalks and tomatoes. Peel the onion and garlic and chop them finely. Wash the zucchini and also cut it into small cubes.
Cooking the Soup
In a large pot, heat one tablespoon of olive oil over medium heat. When the oil is hot, add the celery stalks, carrots, onion, garlic, potatoes, and zucchini. Sauté everything together, stirring occasionally, for 6–7 minutes.
After the vegetables have sautéed, add the diced tomatoes, tomato paste, shell pasta, one liter of vegetable broth, dried basil, oregano, salt, and pepper to the pot. Let everything simmer over medium heat for 13–14 minutes from the moment it boils.
Chef's tip
You can sprinkle finely grated Parmesan and garnish with fresh basil leaves before serving for an authentic Italian look and taste.
