Peel the onion and chop it finely. Peel the potatoes and cut them into small cubes.

In a medium-sized pot, heat the sunflower oil and butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

Add the chopped potatoes and vegetable broth to the pot. Bring to a boil over high heat, then reduce heat to medium, cover with a lid, and simmer for 11-12 minutes, until the potatoes are tender.

For extra freshness, you can add a few drops of lemon juice at the end.
